Sausage Pancakes

I found this recipe at Plain Chicken.  Steph has some Great Recipes!


1 1/2 c All-Purpose Flour
3 1/2 tsp Baking Powder
1 tsp Salt
1 T White Sugar
1 tsp Vanilla Extract
1 1/4 c Milk
1 Egg
3 T Butter, melted
1/2 lb Sausage, cooked and crumbled
Cooking Spray


In a large bowl, sift together the flour, baking powder, salt and sugar.
Make a well in the center and pour in the milk, vanilla, egg and melted butter; mix until smooth. 

Spray griddle or frying pan with cooking spray and heat over medium high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Sprinkle approximately 1-2 Tbsp sausage on top of pancake.

Brown on both sides and serve hot with butter and syrup.
